Fried Crappie

1/3 cup of corn meal
1/3 cup of bread crumbs
1/3 cup crushed corn flakes
Teaspoon garlic powder
Teaspoon onion powder
Teaspoon Cajun seasoning
Mix this all together

A couple of eggs
A big cast iron skillet
Your favorite frying oil (vegetable, canola, etc)

scramble the eggs in a good-sized bowl. Coat the crappie fillets in the egg wash and then cover with the breading mix.
Place the crappie in the preheated oil, medium hot.
Turn the crappie over after 2-3 minutes when golden brown and fry the second side 2-3 minutes. Enjoy.
